Ingredients

16 ounces of smooth peanut butter

1 cup butter, softened (but not melted)

16 ounces of powdered sugar

24 ounces of semi-sweet chocolate chips

1 tablespoon of coconut oil

cook cocoa for dusting (optional)

Instructions

1. Combine peanut butter and softened butter with a mixer until creamy (about 2 minutes over medium heat).

2. Gradually add powdered sugar and mix well.

3. Roll the dough into 1-inch balls. The dough should not be sticky. If so, add more powdered sugar.

4. Place on a baking sheet lined with parchment paper. Refrigerate for 30 minutes.

5. Melt chocolate chips and coconut oil in microwave on high power for 2 ½ minutes. Stop the microwave every 30 seconds and stir until creamy.

6. Place each ball of dough on a fork and dip one by one into the smooth chocolate. Transfer to a lined baking sheet.

7. Refrigerate chocolate peanut butter balls until chocolate shell hardens.

8. Sprinkle cocoa candies to cook if desired.

9. Transfer to wrapping for gift giving or enjoy!
